Angel Biscuits

Ingredients

5 cups flour
1 tsp. baking powder
3 T. sugar
1 cake yeast, dissolved in 1/2 cup lukewarm water
1 tsp. baking soda
1 tsp. salt
3/4 cup vegetable shortening

2 cups buttermilk

Preparation

Sift together dry ingredients.
Cut in shortening thoroughtly.
Add buttermil and yeast mix.
Mix with wooden spoon until all frour is moistened.
Cover bowl and put in refrigerator until ready to use as needed.
When ready to use, take out as much dough as needed.
Roll/pat out 3/4″ thick.
Cut into biscuits.

Bake on cookie sheet at 400 oven for 12 minutes.

Notes

This dough will keep several weeks in the refrigerator (that is if you dont eat it too fast).

Apple Crisp

Ingredients

6 Jonathan apples
1/4 tsp. cinnamon
1/2 cup brown sugar
2 T. sugar
1 cup flour
1/2 cup oleo or butter

Preparation

Peel and slice apples and place in 11″ by 7″ pan.
Mix together sugar and cinnamon.
Sprinkle on apple slices.
Make a topping of four, sugar, andoleo.

Sprinkle over apples and bake for 35-40 minutes at 400.

Card Room Chili

Ingredients

5 lb. hamburger (browned with onion)
3 lb. chopped onion
1 gal. tomato puree
2 gal. water (can use less)
48 oz. tomator juice
2 gal. kidney beans
1/2+ can Chili Powder

Preparation

Season to taste.
Cook very slowly for 1 hour.

Cheese Ball

Ingredients

8 oz. cream cheese
1 pkg. chipped beef, chopped fine
4 sm. green onions, chopped fine
1 tsp. accent seasoning

Preparation

Blend thoroughly. Roll into ball.
Roll in parsley flakes or chopped nuts and let stand 24 hours to blend flavors.

Cinnamon Rolls

Ingredients

Mix together all at once:
1 cake yeast
1 1/4 cup milk
1 T. sugar
1 1/2 cup flour
 
Dissolve sugar and yeast in scalded milk after it is cooled to luke warm.
Let sponge rise till bubbles burst.

Preparation

Cream butter and sugar as for cake.
Keep combining all the rest of the ingredients until it is mixed in.
Let it rise till double.
Roll it out and if you want donuts, cut them just like bismark.
Let them raise on the counter or table after you cut them before frying them.
Fry them in deep fat and then frost them with sugar or powdered sugar icing.
For cinnamon rolls, put cinnamon, melted butter and usually brown sugar on the rolled out dough and roll them up.
then cut in one inch width, put in greased pan and let rais double and bake them at 350.

Corn Bread (sis)

Ingredients

1/4 cup butter
2 eggs
1/2 cup flour
2 1/2 tsp. baking powder
2/3 cup sugar
2/3 cup milk
1 1/2 cups cornmeal
salt

Preparation

Cream the butter and sugar.
Add remaining ingredients.
Bake in 8″ square pan for 30 minutes at 375.

Drop Dumplings

Ingredients

1 egg, beaton
1 cup milk
1 tsp. baking power, rounded
1/2 tsp. salt

flour to make stiff dough

Preparation

Drop into boiling broth.

This was usually added to a pot of stewing chicken (the old hen).

Funnel Cakes

Ingredients

2 eggs, beaten
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp.salt
2 cups cooking oil

powdered sugar

Preparation

For batter, in a mixing bolw combind eggs and milk.
Stir together floour, baking powder, and salt.
Add to egg mixture; beat with rotary beater till smooth.
In skillet heat oil to 360.
Using a finger to cover the bottom opening of a funnel with a 1/2″ spout, pour a generous 1/2 cup batter into funnel.
To release batter into the hot oil, remove finger and move funnel iin a circular motion.
Fry about 2 1/2 minutes or till golden brown.
Using salad grabber turn cake carefully.
Cook about 1 minute more.
Drain on paper toweling, sprinkle with powdered sugar.
Repeat with remaining batter.

Serve warm. Makes 5 large cakes.

Golden Pastry

Ingredients

2 1/4 cup sifted flour
1 tsp salt
3/4 cup “Fluffo” shortening (like crisco butter flavor)

6 T. water

Hermits

Ingredients

1/2 cup shortening
1 egg
1 cup raisins
1 1/2 cups flour
1/2 tsp. salt
1 tsp. allspice
1 cup brown sugar, packed
1 tsp. vanilla
1 cup nuts
2 tsp. baking powder

1/2 tsp. cinnamon

Preparation

Cream shortening and sugar.
Add egg and vanilla.
Beat will. Add nuts and raisins and mix well.
Add dry ingredients alternately with milk.
Chill dough. Drop by teaspoon 2″ apart on greased cookie sheet.

Bake at 375 for 12-15 minutes.

Notes

Makes 4 1/2 dozen chewy cookies.

Hunan cold Spiced Chicken

Ingredients

2 T. soy sauce
4 T. apple cider vinegar
3-6 garlic cloves, crushed
1 tsp. sugar
1 tsp. fresh ginger, diced fine
2 T. extra crunchy peanut butter
dash salt

1/2 tsp. black pepper (optional)

Preparation

Marinate
then
Simmer 1 1/2 lb. chicken breasts for 30 minutes till done.
Marinate.
Let set at least 6 hours, preferably overnight.
Decorate tray with green onions and parsley.

Serve with crackers.

Italian Beef

Ingredients

3 lb. roast, cooked then shredded
1 tsp. garlic salt
1 tsp. Italian seasoning
2 cups beef broth

beef bouillon cubes

Preparation

After roast has been cooked and shredded, add remaining ingredients and simmer.

Serve on rolls.

Ingredients

2 lb. hamburger
2 eggs
1 1/2 tsp. salt
1/2 cup tomato juice
2 cups cracker crumbs
1 sm. onion, chopped

1 cup milk

Preparation

Mix and bake about 1 hour at 350.

Moms Dumplings

Ingredients

2 eggs, beaten
2 cups flour or more
1/2 tsp. salt
1 cup milk

3 tsp. baking powder

Preparation

Mix and drop into hot chicken broth.
Make gravy with some extra broth.

Do not open lid for 15 minutes and cook low to medium heat.

New England Bars

Ingredients

2 cups brown sugar
2 eggs
1 tsp. cinnamon
1 tsp. cloves
3 cups flour
1 tsp. soda dissolved in 1 T. water
1/2 cups nuts
1 cup lard
1 tsp. vanilla
1 tsp. nutmeg
1 cup cold coffee
1 tsp. baking powder

1/2 cup raisins

Preparation

Mix together iin order given.
Bake at 350 for 15 minutes on jelly roll pan or extra large cookie sheet with sides.

Sprinkle powdered sugar over top.

Noodles (maggies)

Ingredients

2 1/2-3 cups flour
1/2 tsp. salt
1/3 cup milk (1/2 egg shell fo milk perl egg)

4 med. eggs (approx. 3/4 cup, at room temperature)

Preparation

In bowl mix flour and salt.
In center of flour pour mil and egg mixture.
Using pastry blender, mix gently and just until ingredients are lumping together.
Divide dough into 2 parts.
Dough should be very elastic, do not knead or overhandle.
Roll out one at a time using about 1/2 cup flour for each part.
Roll very thin.
Wipe off rolling pin as soon as finished, never put your rolling pin into water to clean. cut into 5″ winde strips of dough and let dry.
When dough is dry enough (but not crackle dry), stack strips in pile and cut into narrow strips.
The wider, thicker the strips, the chewier the noodle.
For tender noodles mae them as thin and narrow as possible.
To cook, use the broth from one stewed chicken (meat added later).
Bring broth (and added water to make 3.4 quarts) to full rolling boil.
Drop in noodles and stir frequently.
Reduce heat, cover and simmer very gently for about 25-30 minutes.
Noodles will stick to bottom of pan very easily.
Add water as needed.

Season to taste with salt and pepper.

Ingredients

2 1/2 cups sour milk
1 tsp. soda
1 tsp. baking powder
2 eggs

1 tsp. salt

Preparation

If you dont have sour milk, use sweet and leave out soda.

Peanut Brittle

Ingredients

2 cups white sugar
1 cup white syrup
1 cup water
1 1/2 tsp. soda
2 cups raw peanuts
1 T. salt
1 tsp butter

Preparation

Cook sugar, syrup and water until thick and bubbles up well (thickens and sugar granules must all disappear).
Add raw peanuts, butter and salt.
Cook, stirring constantly so wont burn, until peanuts brown slightly.
too long and may taste scorched.
remove from heat and add vanilla and soda.
Stir vigorously. BE CAREFUL!
Mixture puffs up from teh soda and turns caramel color.
Keep stirring until evenly caramel coloring.
Trun out quickly on buttered slab (marble is great – otherwise metal cookie sheets that are well buttered which can be twisted to get brittle loose.)
DO NOT PUR OUT ON FORMICA TOPS – CABINETS – OR TABLES. It will stick!
Spread out as thin as can add let cool.

Break into pieces when cooled.

Notes

Store in sealed metal container.

Peanut Clusters

Ingredients

12 oz. chocolate chips
2 lb. white almond bark
1 sq. unsweetened chocolate

18 oz. dry roasted peanuts

Preparation

Melt chocolate chips, almond bark and unsweetened chocolate in crockpot on high heat setting.
Stir occasionally. Continue until all is blended.
Stir in peanuts. Drop by teaspoon onto waxed paper.

Cool thouroughly before storing.

Notes

Double the batch at Christmas time to make enough to give away.

Pickle Wrap

Ingredients

1 sm. jar sweet pickles
8 oz. soft cream cheese

1 pkg. bologna (7 or more slices)

Preparation

Spread some cream cheese on bologna slices.
Cut sweet pickles length wise.
Place two pickles on top of bologna and cream cheese.
Roll up and pin toothpicks in to make at least 6 slices.

Cut and serve.

Ingredients

3 cups sifted flour
1 tsp salt
1 cup crisco shortening, heaping

1/2 cup cold water

Preparation

Use pastry blender to blend flour and crisco and salt.

Stir in wate rwith table knife.

Notes

Makes 2 double pie crusts.

Potato Salad (maggies)

Ingredients

10 lb. potatoes, peeled, cooked in salted water, cooled & cut up into bite size pieces
2 dz. eggs, boiled, cut-up
2 med. onions, chopped fine
celery stalks, chopped
1/2 tsp. celery seeds
1 qt. Miracle Whip

salt to taste

Preparation

Mix all together in large bowl.
Refrigerate at least 4 hours or overnight before serving.
This makes a lot of potato salad.

Just right for a big family dinner.

Pumpkin Pie

Ingredients

1 lg. can pumpkin
3-4 eggs
1 cup sugar
1/2 cup milk
1/4 tsp. ginger
1/2 tsp. salt
1 tsp. cinnamon

1/4 tsp. nutmeg

Preparation

Mix and put in unbaked pie shell.

Rye Rounds

Ingredients

2 Pkg. shaved corned beef Buddig etc.
1 sm. can chopped black olives
1 lb. grated cheddar cheese
Helmans Mayonnaise as needed – see below
1 loaf Rye Bread cocktail style – small slices

Preparation

Chop beef into squares or chips and add all ingredients and mix with enough mayonnaise to bring to smooth spreading consistency.
Spread on breads and broil in oven until melted and bubbly.

Can be prepared ahead and frozen with just the broiling right before serving time.

Sailors Salmon Cakes

Ingredients

1 can salmon (remove bones but do not drain juice)
28 soda crackers
2-3 eggs

salt & pepper to taste

Preparation

Mix all together and let set a few minutes.
Make into 8 thin patties
Fry in hot fat.

Serve on buns with mustard, etc.

Notes

Can be frozen before cooking.

Snickerdoodles

Ingredients

1 cup soft shortening
2 eggs
2 tsp. cream of tartar
1/4 tsp. salt
1 1/2 cups sugar
2 3/4 cups flour
1 tsp. soda

cinnamon

Preparation

Chill dough.
Roll into balls the size of walnuts.
Roll in mixture of 4T sugar and 4T cinnamon.
Place 2″ apart on ungreased cookie sheet.

Bake until lightly browned but still soft.

Ingredients

1 lb. hamburger
1 sm. chopped onion
1 T. flour
1/2 lb. pork sausage
2 eggs
1 can corn, drained
3 slices bread soaked in hot water, squeeze dry before using or craker crumbs
salt
pepper

Preparation

Beat eggs.
Add hot milk and butter.
Mix in sugar, flour, baking powder and vanilla.
Mix well.
Bake at 350 in a 9″ x 13″ pan.

top with strawberries and CoolWhip.

Strawberry Shortcake

Ingredients

1/2 cup milk, heated
1 cup sugar
2 tsp. baking powder
2 T. butter (add last)
2 eggs, lightly beaten
1 cup flour

1 tsp. vanilla

Preparation

Beat eggs.
Add hot milk and butter.
Mix in sugar, flour, baking powder and vanilla.
Mix well.
Bake at 350 in a 9″ x 13″ pan.

Mix together flour, salt and baking powder.
Stir in gradually.
Roll dough aout and cut in desired shapes.
Bake at 400 for 8-10 minutes
